Eggplant Roast
Though Krishna and I are not big fans of eggplant, we both love it if made with this recipe. I can eat a plate full of rice with just a couple of eggplant roast pieces :) Recipe is from my amma.
Ingredients
Eggplant of medium size - 1
small Onion - 4
Garlic- 6 big cloves
Pepper-1/4 tsp
Curry leaves - few, chopped fine.
Chilli powder - 3 tsp
Ginger - 1/2 inch piece
Turmeric powder - 1/4 spoon
Salt to taste.
Method:
Make a thick paste of onion, garlic and ginger,chilli powder, turmeric powder, salt and pepper.
Cut eggplant vertically to get thick slices.
Cover the slices with the above paste and keep aside for 10 minutes
Shallow fry the slices in oil in a thick bottom pan (both sides - with medium to low heat setting).
