Spinach

K bought the big bag of spinach from Sam's. And I did come up with some new recipes by squeezing in spinach ... :)

Spinach Rice
(from Bawarchi)
Ingredients
Basmati rice - 2 cupsSpinach - 2 cups (finely chopped)Red chillies - 5Coriander seeds- 2 tbsCoconut -1/2 cupGarlic - 4 flakesMustard seeds - 1 tspUrad dal - 2 tspOnion - 2 large (1 chopped lengthwise)Water - 3 cupsSalt to tasteGhee - 2 tbsCoriander leavesCashewnuts (roasted in ghee)
Method
Wash the Rice 2 or 3 times and soak it 15 min in 3 cups of water.
Cook the Rice with little salt.
Grind Coconut, Coriander seeds, Redchilles, Garlic, 1 Onion & Coriander leaves to a paste.
Add 1 tbs oil in a pan. Add mustard seeds, urad dal, fry 1 onion until golden brown then add the spinach with it. Close and cook for 5 min.
Once cooked add the ground paste & salt. Mix throughly.
Add this to the cooked rice. Add ghee & mix well.
Garnish with cashewnuts.

Spinach Noodles
Add spinach, peas, onion, carrots to maggie noodles

Spinach Chappathi
(Haven't tried out this one)
Add jeera, spinach, chilli powder along with wheat flour. And make chappathis as usual.

Spinach Daal

Toor Daal, 1 onion, Spinach, Tomoto, 1 garlic alli, turmeric powder, chilli powder, water - cook the above in pressure cooker
Seaon with mustards, red chilli, curry leaves

Try adding spinach to lemon rice. It's a good thing!
