Glazed Apple Cake



This is a recipe I got from our local news paper and I made it for my son's birthday party as a snack. Everyone loved it!
Here goes the original recipe.


3 eggs
1.5 cups Vegetable Oil
2 cups sugar
3 cups flour
1 tsp salt
1 tsp baking soda
2 tsp Vanilla
3 cups peeled and chopped apples
1.5 cups of chopped pecans


Mix eggs , oil and sugar. Blend well. Add flour, salt and baking soda. Mix well. Add vanilla, apples and nuts. Spread batter into a greased 9 or 10 inch tube pan. Bake at 350 degress for 60 to 65 minutes.

Glaze

1 cup brown sugar, packed
1/4 cup milk
1 stick margarine

Combine ingredients in a saucepan and cook for two and a half minutes. Pour over cake while still hot and in the pan. Let set until cool. Remove from pan when completely cold.

As usual I did some changes to the original recipe when I made it.

I only used 2 cups of chopped apples and 1/4 cup of pecans. And in the glaze I used only 1/4 stick of butter and used only 1/5th of the glaze mix. Cake was still sweet enough.

This recipe is definitely a keeper!
