I didn't use Hunt's tomato cans since I had plenty of cherry tomatos from my backyard. I just blanched them before use.
Oothappam
When I make idli/dosa batter, I usually make in bulk so that it will last us a week. First couple of times I make idlis, next couple of times dosa and when the batter turns sour towards the end, I make oothappams.
For about 12 oothappams:
1 medium sized carrot grated,
1 medium sized onion cut into small pieces
a handful of Cilantro leaves
Saute onion in 1 tbsp oil until it turns transparent (don't add any salt) and keep aside.
Apply oil on the griddle top. Pour the batter over the griddle, decorate it with onion, carrots and cilantro. Turn the appam to the other side once the bottom turns golden and cook both sides. Oothappam tastes good with chutney powder and best with coconut chutney.

Glazed Popcorn (Brown sugar coated Popcorn)
I had some leftover glaze from last weekend's Glazed Apple Cake (previous post). I was thinking may be I would make another batch of the apple cake since everyone at home loved it. But then I had another idea. I wanted to try 'Glaze'd Popcorn. I put half a bag of popcorn into the glaze liquid and took it out once it is coated well with the glaze. Here is the result.
The look was perfect and the taste was perfect. But the popcorn took a day to dry up. So I think the consistency of the glaze was not correct. Anyway, half a bag of glazed pocorn got over pretty soon and there is always a next time. :)
Update: I hadn't referred net when I tried to make glazed popcorn and it was not perfect. Here is a recipe from cooks.com.
8 c. popped popcorn
1/4 c. butter
3 tbsp. light corn syrup
1/2 c. packed light brown sugar or white sugar
1 pkg. (sm.) Jello gelatin, any flavor
Place popcorn in large bowl. Heat butter and syrup in small saucepan over low heat. Stir in brown sugar and gelatin; bring to a boil over medium heat. Reduce heat to low and gently simmer for 5 minutes. Pour syrup immediately over popcorn, tossing to coat well.Spread popcorn on aluminum foil lined 15 x 10 x 1 inch pan, using 2 forks to spread evenly. Bake in preheated 300 degree oven for 10 minutes. Cool. Remove from pan and break into small pieces.
Rainbow Popcorn: Prepare Glazed Popcorn 3 times, using 3 different gelatin colors such as strawberry, lemon and lime. Bake as directed and break into pieces. Layer 3 cups of each variety in 3 quart bowl. Serve remaining popcorn at another time. Makes 6 quarts.

Glazed Apple Cake
This is a recipe I got from our local news paper and I made it for my son's birthday party as a snack. Everyone loved it!
Here goes the original recipe.
3 eggs
1.5 cups Vegetable Oil
2 cups sugar
3 cups flour
3 cups flour
1 tsp salt
1 tsp baking soda
2 tsp Vanilla
3 cups peeled and chopped apples
1.5 cups of chopped pecans
Mix eggs , oil and sugar. Blend well. Add flour, salt and baking soda. Mix well. Add vanilla, apples and nuts. Spread batter into a greased 9 or 10 inch tube pan. Bake at 350 degress for 60 to 65 minutes.
Glaze
1 cup brown sugar, packed
1/4 cup milk
1 stick margarine
Combine ingredients in a saucepan and cook for two and a half minutes. Pour over cake while still hot and in the pan. Let set until cool. Remove from pan when completely cold.
As usual I did some changes to the original recipe when I made it.
I only used 2 cups of chopped apples and 1/4 cup of pecans. And in the glaze I used only 1/4 stick of butter and used only 1/5th of the glaze mix. Cake was still sweet enough.
This recipe is definitely a keeper!
